We selected it for its clarity, aromatic lift, and unusual but well-defined profile. Processed within a day of harvest, the cherries were fermented with Koji for three days in a dedicated Koji Muro, then dried for eight days in a temperature and humidity-controlled room. This careful approach builds sweetness and aromatic complexity while keeping the cup clean and structured. Expect fresh grape sweetness, rose, sake-like aromatics, and gentle spice. The texture is silky, and the finish is clean, elegant, and well defined.
