Ethiopia

Ethiopia is where Arabica started, and it still produces some of the most distinctive coffee on earth. The range is the point. Yirgacheffe and Gedeo washed lots come through like jasmine and bergamot and stone fruit, clean as a bell. Sidama and Guji do both washed and natural — the naturals lean into blueberry, strawberry, sometimes straight tropical fruit. Harrar in the east dries coffees the old way and comes out wild and berry-heavy, a little feral.
Most of it is grown by smallholder farmers at altitudes between 1,500 and 2,200 metres. Cherry gets sold to cooperatives or private washing stations that bring lots together from across a village or region. Some moves through the Ethiopian Commodity Exchange, some through direct-trade deals with the buyers who’ve been flying in for years.
If you’ve never tasted a natural Guji, start there. It has a habit of rearranging what people think coffee is capable of.
