This CM Natural lot comes from Supriyanto, better known as Iyan, a producer working on Mount Suket in Ijen, East Java, Indonesia. His farm sits at 1700 metres above sea level on the Ijen volcano range, where the high-altitude volcanic soil helps create coffees with strong fruit character, balanced acidity and a deep, syrupy sweetness. Iyan’s farm spans more than 8 hectares, with coffee trees originally planted by PT Perkebunan Nusantara and later cultivated by him. This lot is process-forward by design. The coffee is placed in a sealed bioreactor tank for 120 hours in an anaerobic environment, injected with carbon dioxide, and then dried as a natural. The result is a dense, expressive cup with notes of orange, forest fruits and molasses, alongside a deeper raisin, cherry and winey character. For us, this is the kind of Indonesian coffee that shows how much range the origin can have, volcanic, fruit-driven, sweet and intense, while still carrying enough structure to keep the cup clean and layered.
