This extended maturation allows sugars to concentrate and complexity to build, resulting in a cup that rewards those who appreciate the finer details of specialty coffee. The name “Alasitas” comes from a Bolivian tradition symbolizing growth and abundance reflecting the farm’s vision for the future of coffee.
