Colombia + Antioquia Varietal: Rosado Process: Washed + Thermal Shock Altitude: 1500 masl Milk Bottles, Oolong Tea, Treacle This Rosado J-07 coffee is produced by Jorge Mira at the El Jaragual farm , situated in the Antioquia region of Colombia. A Rosado varietal grown at an elevation of 1,900 metres , it undergoes a sophisticated Washed + Thermal Shock process to ensure flavour clarity. The meticulous production begins with harvesting cherries at a minimum of 90% ripeness , followed by 24-hour oxidation periods both before and after dry pulping. A distinctive thermal shock is achieved by washing the beans at 45°C, followed by a 36-hour fermentation with specific yeast at temperatures below 25°C. To seal the fermentation, the coffee is washed at 5°C before undergoing a 76-hour drying stage and final stabilisation in GrainPro bags.
