BEHIND THE CUP "Suukala" - a name that rolls off the tongue like a whispered promise of sweet indulgence. This microlot of coffees, with its sugary notes and delightful flavours, is the result of a patient dance between expert growers and the earth they nurture. Perched high on the Colombian plateau called the 'Macizo Colombiano', these farmers have cultivated a tradition that stretches back to the time when the Jesuits built their first church in 1737. Today, this heritage is honoured by the 290 members of the ASORCAFE association, who work tirelessly to perfect their craft. Each sip of Suukala is a journey through time and place, a taste of the Colombian plateau where altitudes soar to 2100 masl. Here, amidst the traditional varieties of caturra, typica, and bourbon, small plots of land bloom with the promise of exceptional coffee. The beans are tenderly handled, pulped, and fermented under the watchful eyes of these dedicated farmers, before being washed and dried in the gentle embrace of parabolic driers. It is here, that Siruma, our partners in Colombia, have discovered the secret to these remarkable coffees. A testament to the passion and dedication of these growers.
