After sorting, whole cherries are dried on raised beds and turned regularly to ensure even airflow. Unlike faster drying approaches, this lot is dried slowly for weeks – this extended drying period allows sugars to fully develop within the fruit, contributing to the coffee’s depth, sweetness and complex fruit character. Since 2020, the station has been operated in partnership with Baho Coffee, founded by Emmanuel Rusatira. Beyond processing, Baho is deeply involved in farmer support, providing training, agricultural inputs, and access to better pricing structures to incentivize quality. Through Farmer Field Schools, producers receive practical education on soil health, water conservation and sustainable farming practices, helping improve both yields and long-term resilience.
