From Chiapas, Mexico to your Cup Mexico Chiapas Sierra Azul is a Shade-Grown Organic and Fairtrade Certified coffee with a medium-bodied softness, a clean finish, and a nut-like aroma. It is, in our opinion, a quietly perfect coffee. It doesn’t shout at you with loud flavors – it invites you in a subtle way. The first day you will think to yourself, “this is pretty good cup of coffee.” The next day you will say, “You know, this coffee is really tasty.” By the third day you will say to yourself, “I think I have found my new favorite coffee!” Our Mexico Chiapas Sierra Azul is a coffee cooperative located in the southern highlands of Chiapas within the buffer zone of the El Triunfo Biosphere. El Triunfo is an area of great ecological importance because it contains two of the most complex and beautiful ecosystems in the world: the Cloud Forest and the Tropical Rain Forest. El Triunfo’s unique ecosystems are home to an incredible quantity of plant and animal species considered rare or in danger of extinction. Sierra Azul members are deeply committed to sustainable agricultural practices that prevent the encroachment of agriculture into the Biosphere and the disturbance of the natural resources within its boundaries. The coffees we source from this cooperative are from 100% women owned farms, part of the Cafe Femenino program. Many of the women who produce Café Femenino in this Sierra region of Chiapas are decendents of the ethnic ancient Mayan culture of Mame, though today few that are able to speak their mother language of Mame.
