Their dedication inspired him to focus on improving quality and creating more value through specialty coffee. Over time, Diego became fascinated with varieties such as Geisha and Sidra, while experimenting with modern processing methods including anaerobic and natural fermentations. Today, his farm reflects a balance between innovation, sustainability, and family tradition, supported by diversified crops and a strong connection to the land. For this washed Pink Bourbon lot, cherries first undergo a 12 hour oxidation stage before being depulped and fermented in sealed bags for 30 hours. The coffee is then dried slowly in a drying shed for approximately 15 days until reaching 10.3 percent moisture. The result is a refined and expressive cup with clarity, sweetness, and layered complexity that showcases Diego’s careful approach to processing and quality. This coffee peaks between 15 and 20 days. For the best experience, we recommend freezing it within this window if you want to enjoy it over a longer period.
