Jhon Didier Trujillo’s coffee from Finca Villa Flor was one of our favorite Chiroso samples of the season, so we’re excited to have a very small amount of it to roast and share. Jhon Didier grows only the Chiroso variety on his 3.5 hectare farm in Urrao, the area of Colombia responsible for the initial cultivation of Chiroso, and still the area most closely associated with its production today. Jhon Didier is an experienced farmer who also grows lulo, plantains, and avocado, and takes exceptional care of his soil. His Chiroso is stellar. While many Chirosos can display herbal and savory qualities in the cup, this lot presents more with dense tropical fruit, melon, crisp acidity, herbal tea florality, and citrus accents.
