Mountain Water Decaffeination: About The Process This genius approach to decaffeination involves creating a ‘green solution’ which can be used multiple times for multiple, enormous batches of coffee. Beans are soaked in warm water, which slowly extracts all compounds in the bean, even caffeine. This flavour rich green solution is passed through a charcoal screen, removing caffeine but allowing everything else to remain. The producers can then sit another set of green beans in the solution, and given the solution is saturated with flavour compounds, but not caffeine, osmosis allows the caffeine to leave the beans, but not the flavour. The solution is then charcoal screened again and the cycle continues. No chemicals, no unwanted extra flavour, no flavour lost.
