A Bright, Elegant Peaberry from the Shores of Lake Kivu Inzovu is a washed peaberry from Rwanda Trading Company, sorted from cherry delivered by hundreds of smallholder farmers to the Inzovu Washing Station in western Rwanda, near the shores of Lake Kivu. Inzovu means “elephant” in Kinyarwanda — a symbol of strength and presence. Grown on high volcanic slopes and planted mostly to Red Bourbon, then selected for peaberry (the single, rounded bean that concentrates sweetness and clarity), it cups clean and refined: bright citrus, a rounded honeyed sweetness and a soft floral finish. The area around Lake Kivu benefits from high elevation, fertile volcanic soils and a temperate climate, so cherries mature slowly and develop the refined, tea-like clarity Rwanda is prized for. Most trees here are Red Bourbon — the country's dominant and best-performing variety. Processing follows Rwanda's classic fully-washed style: hand-sorted cherry, careful pulping, an extended fermentation, thorough washing and slow drying on raised African beds.
