Brazil & Ethiopia | Natural | Milk Chocolate, Marzipan, Orange Zest, Dried Berries The Idea The Components The Cup Recipes Our Sunlight Blend is designed to brighten up your mornings. Smooth, sweet, and comforting, with just enough complexity to stay exciting. This is our take on an everyday coffee: approachable, versatile, and endlessly drinkable, whether brewed as filter or enjoyed as espresso. The Idea Sunlight remains built around balance and sweetness, with our beloved Brazilian base doing most of the heavy lifting. With this update, we wanted to add a little more depth and dimension without losing the comforting character that defines the blend. By introducing a natural Ethiopian coffee, Sunlight gains subtle fruitiness and aromatic lift, while staying round, mellow, and crowd-pleasing. Compared to Moonlight, Sunlight stays softer and sweeter, with fruit playing a supporting role rather than taking center stage. Sunlight is a blend built around two natural coffees, carefully selected for balance, sweetness, and harmony. From Brazil, we use our long-standing cornerstone: Monte Cristo from Daterra. Grown in the Cerrado region and meticulously processed, this coffee brings structure, creamy body, and comforting sweetness to the blend. Expect chocolatey depth, round mouthfeel, and a steady backbone that makes Sunlight incredibly versatile across brew methods. The second component comes from Ethiopia, our favorite origin for adding elegance and complexity. We chose a natural Heirloom lot from Gedeb Lalesa, sourced through Falcon Coffees and Ephtah Specialty Coffee. Grown at high altitude and slowly dried on raised beds, this coffee contributes gentle fruit notes, aromatic lift, and a touch of vibrancy, without overpowering the blend. Together, these two coffees create a blend that feels familiar yet refined, comforting, but never boring. In the cup, Sunlight is sweet, round, and inviting. The Brazilian base delivers classic notes of milk chocolate and soft sweetness, while the Ethiopian component adds layers of marzipan, orange zest, and subtle dried berry fruitiness. The result is a smooth, balanced coffee with gentle complexity, a creamy mouthfeel, and a clean, comforting finish. Easy to love, easy to brew, a true all-day coffee. Please note that our recipes are just guidelines of how we like to brew these coffees. Grinders, water, and equipment are variables that can affect the final cup. Use these as starting points rather than fixed rules. Espresso Brewed on a Linea Mini R, with water around 120 ppm and a Mahlkönig X54 grinder. We enjoy this coffee at 18g in, 40g out in about 27–29 seconds for a sweet, balanced shot. Filter coffee Brewed with a plastic V60, CAFEC ABACA filters, and Third Wave Water light roast water. We recommend 15g coffee, 90°C water, and a medium-coarse grind. • 0:00 – Pour 50g and bloom for 45 seconds. • 0:45 – Pour 100g in slow circles. • 1:25 – Pour remaining 80g. Total brew time: 2:00–2:15. Enjoy the coffee!
