Sweet, balanced, and just really enjoyable—whether you’re pulling it as espresso or brewing it slow on a Sunday morning." This very lovely coffee is from northern Peru, near the Ecuador border, you’ve got San Ignacio and Jaén—proper coffee country. Lush, green, a bit wild in places. Loads of biodiversity, rich soils, and the kind of climate coffee plants love. The name El Guaycan comes from a bright yellow tree you’ll see across the farms.When it flowers, it lights everything up. It also gives shade to the coffee plants—quietly doing its job in the background.A bit like this coffee, to be honest. This lot comes from a group of small producers working with Caravela Coffee and their PECA team. Over the last few years, they’ve been seriously levelling things up—better picking, better processing, more attention to detail. This coffee is picked ripe. Sorted properly, then depulped, fermented for a day or two.Washed clean and dried slowly in the sun. We choose this coffee as part of the Carnival line up as it is your dependable, dial-it-in-once-and-it-sings kind of coffee. Great for mornings. Great for guests.
