why equinox? equinox is inspired by autumn and the feeling we wanted this coffee to create: warmth, familiarity, sweetness and quiet ease. rather than tying the name to a single origin or flavour profile, equinox represents a consistent experience. the coffee behind it may change with harvests and seasons, but the aim will remain the same: a sweet, rounded and dependable cup with enough complexity to stay interesting. it’s the coffee to return to. process this lot is a washed Esperanza, a variety known for its sweetness, clarity and expressive cup potential. after harvest, the coffee is carefully processed using the washed method, allowing the character of the variety and terroir to come through with clarity. the result is a clean and structured profile, where sweetness, body and acidity are held in balance. for equinox, we selected this lot because it delivers the kind of sweetness and comfort we want from our core house coffee, while still offering enough complexity to remain interesting cup after cup.
