Aromas of toffee lead into a flavor profile of lemon, prune, malt, and nuttiness. The finish is smooth, with a raisin-like sweetness. Story Cooperativa Café Timor sources coffee from over 20,000 smallholder farmers in East Timor’s Ainaro, Ermera, and Lequisa districts. Coffee was first introduced by Portuguese colonists over 400 years ago, but production only resumed after the introduction of the rust-resistant Híbrido de Timor variety in the 1900s. Established in 1994 with support from the USDA and NCBA, CCT helps farmers export their coffee and also funds healthcare services, including rural clinics and mobile teams, which have served over two million patients since 2001.
