This year’s Christmas drop! Club Tropicana comes straight from the mountains of Palestina, Huila, where Efrén Echeverri and his family craft some of the most innovative coffees in Colombia. Their work at Finca Las Palmas blends deep tradition with fearless experimentation, and this lot is a perfect example. Process: Harvested cherries undergo 96 hours of anaerobic fermentation, but with a twist: the tanks are layered with pineapple and panela, supercharging (V8) the tropical character without masking the coffee’s natural identity. After fermentation, the coffee rests in parabolic beds for 15 days, drying slowly and evenly to lock in clarity and sweetness The result is proper. Expect orange blossom aromatics, pineapple, dragon fruit, and passion fruit, and a rounded maple honey sweetness that feels like Christmas dessert in liquid form. Clean finish, big tropical energy.
