This innovative approach harnesses ethyl acetate (EA), a naturally occurring by-product derived from sugar production (molasses). The process is simple and and follows these steps: • The coffee beans are moistened with water and EA is circulated throughout. • During this process, ethyl acetate interacts with the caffeine within the coffee bean, extracting the caffeine while preserving the majority of the flavour compounds. • Once the desired caffeine level is achieved, the beans undergo a steaming process to eliminate any remaining residue of ethyl acetate. • Natural EA is obtained from the sugar cane industry around Palmira, Colombia and is, together with spring water, the only other substance the coffee gets in contact with.
