This coffee was featured in our barista Ray’s MOBC-winning routine this year. It underwent carbonic maceration, a method inspired by winemaking — placing whole cherries in stainless steel barrels, allowing them to ferment in a carbon dioxide-rich environment. This results in a vibrant and flavourful cup. More on the process The name Symmetry reflects the balance between CO2 fermentation structure and the expressive sweetness of whole-cherry drying, yielding a cup that is both complex and approachable. Whole ripe Geisha cherries are pulped and placed in CO2-pressured tanks before drying on raised beds with their parchment intact, developing deep fruit sweetness. The result is a distinctive Panama Geisha expression, showcasing tropical fruit, berry character, and rich sweetness.
