The cherries are handpicked at peak ripeness, pulped and naturally fermented for 12 hours, followed by wet hulling, known as Giling Basah, a technique unique to Sumatra that enhances the coffee's deep, complex flavours. After drying for five days and hand-sorting, the beans are rested for 30 days to further develop their rich profile. Produced by a young, innovative local processor in Dolok Sangul, Blue Bianca consistently earns high marks on the cupping table and sets the bar for premium Indonesian single origin coffee.
