This geisha harvest underwent a honey lactic fermentation, broken down below - The ripest cherries are hand-picked - They undergo a anaerobic fermentation, with the mucilage still intact - They are pulped before undergoing a second fermentation, this time in sealed barrels with lactic bacteria from a previous geisha fermentation - The drying phase last 13 days on raised beds sun dryers, followed by a 2 month stabilisation period in temperature controlled environment This results in a super sweet and tropical cup that excels on both espresso and as a filter- mango, lychee, peach and lemon zest abound in this highly expressive offering.
