This decaf from Colombia is a stalwart of the offerings at both our locations- this blend of Castillo and Colombia varietals is a coffee produced by a co-operative of farmers across Colombia's famous Huila region at 1600-1900masl- Amenaza Menor. This beautiful decaf undergoes Sugarcane Decaffeination, having been already processed as a washed at the parchment stage - The coffee is moisturised to open its pores, preparing it for the extraction stage. - In extraction tanks, the beans are soaked in Ethyl Acetate (derived from sugarcane) - Ethyl Acetate circulates through the extraction tank, removing the caffeine from the beans - The coffee is vaporised to eliminate any residues of Ethyl Acetate - A drying phase returns the coffee to its normal moisture levels before being transferred to cooling silos to reach room temperature This comparatively gentle decaffeination process allows this coffee to retain much of its original character- in the vein of more traditionally processed Colombian coffees, you will find notes of red apple, caramel and raisin that excel black or white.
