He owns 23 hectares of land, 16 of which are dedicated to coffee production. The Garcia family has been cultivating coffee since 1970. Today, Wilder and his family are guided by a business vision that prioritizes social and environmental responsibility. Wilder is renowned for producing a diverse range of varieties. From traditional varieties such as Typica and Catimor, as well as newer or rare varieties like Caturra, Pacamara, Gesha, Java and more. For all varieties, Wilder focuses on processing using conventional methods, but with an elevated edge such as adpoting new spacing systems and advanced pruning techniques (skeletal pruning) to increase yeilds for certain varieties. The farm’s unique microclimate, combined with meticulously executed conventional processing methods, produces beans with exceptional flavor profiles. This lot of Bourbon was de-pulped, thoroughly washed to remove the mucilage, and then dried on raised beds for 10 to 18 days until the ideal moisture content was achieved. This resulted in a coffee with a clean, comforting notes of hazelnuts, sweet lingering notes of dried dates, and soft acidity of red apples.
