The high altitudes, fertile volcanic soil, and the suitable climate of this area contributes to the exceptional flavor profile, which one may refer to as 'typically Ethiopian'. Coffee production is a significant economic activity and a primary source of income for many locals. In Ethiopia where the locals manage farms of less than two hectares on average, smallholder farmers typically practice traditional farming methods and gather together at a washing station. This natural lot was produced by smallholder farms located in and around Kokose village, and the beans have gone through density sorting, and drying under direct sunlight to reach optimal moisture readings before being dry-hulled. The result is a coffee with calming floral notes of lavender, bright acidity of lime, and fruity juicy undertone of cassis.
