Entre Rios — Guatemala / Washed Process ORGANIC

Origin In March, Luca (our head roaster) and Anselme (co-founder) travelled to Guatemala to meet our partners at Los Volcanes Coffee, founded by Josue Morales. For the past three years, we have been sourcing our Guatemalan coffees through Josue and his team. Their Beneficio La Esperanza station in Antigua is more than a mill: it also serves as a quality lab and a demonstration farm. Every lot is cupped and checked separately, new varieties are trialled, and a compost made from coffee cherry pulp is produced and returned to farmers free of charge. Like all our selections, this coffee belongs to the small share of global production that qualifies as specialty. In the cup This trip led us to choose our first certified organic coffee: Entre Rios. It is full-bodied yet balanced, with a smooth texture and notes of Dulcey chocolate, caramel and nougat. A versatile, comforting coffee that works well both as espresso and as a strong filter brew. Project The Entre Rios cooperative, founded in 2009 and now made up of 26 producers, became independent in 2018 in order to obtain its own organic certification. Since then, Los Volcanes has bought their full harvest every year, providing stability and fair income. Working in specialty already sets these producers apart; achieving organic certification as well adds another layer of commitment and value to their work. For us, it is a trusted relationship and an important step in offering certified organic coffees.
