Unico was founded in 2012 by Assaf Rips, a certified SCAE barista and trainer and SCAA-certified cupper who previously served as VP of Marketing and Sales at Awa. The roastery, based in Kibbutz Yagur at the foot of Mount Carmel, works with single-origin and blended coffees from Ethiopia, Brazil, Cuba, Sumatra, Santo Domingo and Guatemala.
