The surrounding coffee region is on the plateau where the Andes mountain range reaches southern Colombia from Ecuador. Here, on the Cauca and Popayan plateau, at an average of 1600 meters above sea level, the rich soil — enriched over time by the neighboring Purace volcano — provides an ideal environment for growing Colombia drip bag coffee. In this region, coffee farms are typically smaller than 5 hectares and are tended by indigenous groups who have been growing coffee for generations. The area has two rainy seasons, which yield a main crop and a mid crop (mitaca), allowing a fresh supply of Colombia drip bag coffee year-round. The main crop runs from April to December, and a smaller, mid crop follows from December to January. Each cherry is handpicked, pulped, and washed on the farms before the dry parchment is sent to a mill for selection and export. Coffees from near Popayán are known for their aroma, medium acidity, and medium body, with the altitude, soil conditions, and washed processing contributing to a sweet, chocolatey aftertaste
