This Honduran Geisha comes to us from La Lupita — a very small farm near Chinacla in the region of La Paz. It’s owned and managed by Ednar Méndez who named the farm after his youngest daughter. The farm is very new, but it’s already achieving great results in cup quality. Originally, Ednar planted Catuai and Parainema varieties on his farm, focussing on Honey and Natural coffee processing. After witnessing a friend achieving exceptional results with Geisha varieties in the same region, Ednar decided to replant some of his farm with Geisha as well — and the effort and wait eventually paid off. The new Geisha varietal planted at Ednar's farm produced an exceptional and delicate flavour profile and because of this, Ednar decided to leave the Geisha coffee as washed to highlight theses attributes alongside the jasmine flavours in the cup. Ednar also works as a Quality Control at Pacayal coffee and with his wife they also run a small shop at the top of the mountain where La Lupita is located, in order to bring essentials to the local community every time they come to work on their farm. All of the profits of the little shop goes to pay for wages of the shopkeeper. Process Ripe cherries has been handpicked on the farm. But because there’s nowhere to dry them in the mountains, they were brought back to Chinacla where they have been slowly dried on patios beds over the course of two weeks.
