This coffee is very sweet and juicy with all sorts of ripe fruit notes. A fruity note of blackcurrant stands out the most for us, while there is a lot more going on. The intense aroma from the anaerobic fermentation is harmoniously paired with a juicy brightness and a lot of clarity, which we attribute to the washed process. After the harvest, the coffee cherries are floated to remove defects and then pulped. The coffee is then fermented in tanks for 12-14 hours. After this initial fermentation, they are rinsed off in water channels and graded by density at the same time. The densest beans are then taken into tanks for a secondary fermentation – this one being a short 8-hour anaerobic fermentation. After another round of sorting on pre-drying tables, the coffee is dried on raised beds for 16-20 days. This coffee was produced and processed exclusively by women. While women carry out the majority of the work in households as well as in coffee production, they receive only a small fraction of the proceeds in many other places. With over 70% of Gasharu's employees being women, the company named this coffee Rugori to honor their invaluable contributions to the coffee community. Urugori (translates to «women’s crown») is a crown that women in Rwanda are given after giving birth to their first child as a symbol of motherhood, respect and recognition of their contribution to society.
