This coffee is produced by Zully Paya, a woman farmer from the municipality of Nátaga, Huila. Zully plays a pivotal role in advocating for women farmers and resides on her farm El Miardor (The Viewpoint), where she grows varietals Caturra, Pink Bourbon, and Cenicafé 1. Zully's Cenicafé 1 is a daily-driver for espresso-based drinks. In the cup, you can expect notes of raspberry upfront, smooth milk chocolate throughout the body, and an intense sweet finish reminiscent of brown sugar that lingers - a clean, complex cup suited for every day drinking. Cenicafé 1 is developed by the Cenicafé (Colombia's national coffee research center) and is a result of a cross between the classic, sweet Caturra and the hardy Timor Hybrid 1343. Many of the varietals that define Colombian coffee has been developed by Cenicafé research center over decades to improve coffee growing for farmers - coffee trees that are less susceptible to disease and possess a good cup quality. Recipe 18g, 38ml, 25-30sec For best results, aim for a yield of 35-38ml!
