The process is as natural as possible and fairly simple. It uses a naturally occurring compound called ethyl acetate (EA), derived from sugarcane, to remove caffeine from the beans. The green coffee is gently moistened with water, and EA is circulated through the coffee. The EA binds to the caffeine and extracts it, while preserving most of the coffee’s original flavour compounds. NIGHTCAP — ready for bedtime !
