The latest product of our highly fruitful partnership with Luis Marcelino of Aroma Nativo in the Hulia region of Colombia, this a Papayo varietal harvested at 1700-1750masl on 16/09/25 processed as a Hydro Honey. As is typical of Luis, the approach to the processing of this coffee is highly scientific - A controlled fermentation in an anaerobic environment before pulping - A drying phase spanning a few days - A second fermentation which results in its rehydration with selected yeasts and bacteria - A 13 day drying phase followed by a 3 month stabilisation period This all results in a tropical cup heavy with apricot, mango and papaya- easily utilised either black or white, either espresso or filter.
