Origin: Mangshi, Yunnan, China Farm: Project One Light Producer: Olina Cai Altitude: 1,600 - 1,800 m Variety: Catimor Process: Yeast Natural Notes: Peach, Oolong Tea, Lychee Recommended brew method: Filter Grown in the highlands of Mangshi in Yunnan, this coffee is the result of careful cherry picking and meticulous processing led by Olina Cai and her team at Project One Light, an initiative founded in 2021 to highlight the potential of Yunnan coffee. By working closely together with local producers, the project aims to create better opportunities for coffee farmers, empowering them with knowledge, infrastructure, and direct access to higher value markets. Based in the heart of Yunnan, the project brings together local Q-graders, processing specialists, and experienced coffee traders. By prioritizing the wellbeing of everyone in the supply chain and focusing on the careful management of the growing environment and rigorous quality control, the team ensures both consistency and integrity at every stage. After the harvest and selection of only the ripest cherries, the cherries undergo an anaerobic fermentation in sealed tanks where a patented yeast strain is introduced to guide flavor development. Over the course of 7 days at a controlled temperature of 20 degrees Celsius, the yeast interacts with the natural sugars in the fruit to enhance the coffee’s complexity. Once fermentation is complete, the beans are thoroughly washed in fresh mountain water to remove any remaining mucilage and then dried on raised beds for 15 to 30 days. You can expect soft sweetness of peach, delicate notes of oolong tea, and a refreshing finish of lychee.
