His motivations are to challenge the global market perception of Brazilian coffees through experimental processing techniques and greater cultivar selection. In addition to traditional Brazilian varieties like yellow bourbon, the farm boasts more than 30 exotic varieties of coffee. Progressive cultivation practices such as shade plantation along with innovative drying processes create new and exciting flavours. Since its conception, Santuário Sul has placed 4 times consecutively in the Brazil Cup of Excellence competition since 2018. Notably, in 2021 Luiz’s naturally processed Yellow Bourbon won him 2nd place with a whopping score of 90.14 points. This is a testament to Luiz Paulo’s endless dedication to the industry. A true pioneer. It goes to show how fortunate we are at Seven Seeds to have access to his stunning coffee and it must be said that we are so proud to work with him and his team at Carmo Coffees. While Brazil’s climate is typically ideal for the more water-efficient natural (dry) processing—allowing the coffee cherries to sun-dry in tact—the practice of washed processing remains uncommon. This preference is further driven by the economic efficiency of large-scale mechanised harvesting and lower altitudes, which favor the less labor-intensive natural method. However, some forward-thinking farmers are achieving fantastic results by experimenting with the washed process on smaller lots. Five years ago, we were captivated by this particular Washed Bourbon lot. This year, we’ve chosen to feature it in our filter offerings, confident that it represents the absolute best Brazil has to offer. We certainly think so—what are your thoughts?
