Seven Seeds was opened in 2007 by Mark Dundon in a former warehouse on Berkeley Street, Carlton. It's widely credited as one of the cafés that kicked off Melbourne's third-wave movement and trained a generation of baristas. The roastery on Carlton's northern edge supplies a small group of sibling cafés and a long list of wholesale clients. Seven Seeds focuses on transparent sourcing — published farmgate prices, repeat lots from Colombia and Ethiopia, and a quietly relentless cupping programme.
