Producer: COCAFELOL Process: Honey Varietal: Bourbon, Catuai, Caturra, Icatu, Lempira, Pacamara Altitude: 1100-1650m Tasting notes: Toffee, Chocolate, Honey, Caramel COCAFELOL has been working diligently on behalf of their coffee producers since 2000. The organisation is keen to promote sustainable agricultural practices and uses many of the waste products from the process of its coffee to use as organic fertilisers to be used on its members farms. During harvest when the coffee is at its optimum ripeness, the product is collected manually before being sent to centralised washing stations for pulping, washing and drying. Around 30% of the yearly harvest is received as cherry and requires full processing. SHG grades are dried using guardiolas to guarantee a good consistent result.
