Profile: Elderflower, Chardonay, Green Apple, Blood Orange Heritage • From the farm Pluma Dorada • Region: Santa Rosa, Colasay, Cajamarca • Grown in an altitude of 1,820 • Geisha Varietal • Washed Process • Purchased through Chacra Coffee A washed Geisha from Peruvian producer Andy Llanos showcasing the potential of the region with the incredibly complex coffee. From the highlands of northern Peru is the farm Pluma Dorada, owned by Andy Llanos Delgado, a third-generation coffee farmer dedicated to innovation and quality. After inheriting the family farm, Andy has led an ambitious renovation, introducing new coffee varieties and experimental processing techniques that elevate the potential of the Colasay region. The farm is home to a rich diversity of cultivars, including Bourbon, Tabi, and a small plot of Geisha, reflecting Andy’s forward-thinking approach. This particular lot features the Geisha variety and showcases Andy’s attention to detail in crafting a complex cup. This lot was then processed using a ‘submerged’ fermentation method. The coffee was placed into a fermentation tank 3⁄4 full, then topped up with clean water and left to ferment for 48 hours. The seeds were then washed to remove the mucilage before being dried on raised beds, but covered with clear plastic over 15 days. The result from this fermentation is a bright acidity and tea like body, with less crisp wine-like notes and floral aromas. Roast Level: light We roast the coffee to a light level so it is perfect for filter coffee drinkers who like a full-bodied coffee with a bright acidity and floral complexity found in the Geisha varietal.
