Through his dedication and focus on refining fermentation processes, he has helped elevate the quality of coffee produced on his farm. FERMENTATION The wet process uses water to remove the coffee cherry's skin and pulp. followed by fermentation to break down the mucilage. During fermentation, natural enzymes convert sugars into acids, gases, or alcohol, which can influence the coffee's flavor. The beans are then rinsed, dried, and milled, preparing them for roasting.
