Devoción was founded in 2006 by Steven Sutton in Bogotá, Colombia, and is unique among US specialty roasters in operating the entire supply chain from farm to roastery: green coffee is sourced from a network of more than 200 Colombian smallholders, processed at Devoción's Bogotá mill, and air-freighted to Brooklyn within ten days of milling. The Brooklyn flagship roastery and café on Grand Street in Williamsburg pioneered the fresh-green model and has been featured in The New York Times, Bon Appétit, and Sprudge. The brand operates additional cafés in Manhattan and Washington DC.
