Parlor Coffee was founded in 2012 by Dillon Edwards in the back room of Persons of Interest barbershop in Williamsburg, Brooklyn — the name is a nod to those origins. The roastery now occupies a dedicated production space in Sunset Park where it roasts an ultra-curated lineup of single origins and the long-running Heritage blend. Parlor was an early American adopter of carbonic-macerated and natural Ethiopian lots and has been a Sprudge top-roaster regular since 2016. The Sunset Park space includes a tasting room open by appointment.
