Sey Coffee was founded in 2016 by Tobin Polk and Lance Schnorenberg in a sun-drenched East Williamsburg warehouse on Scott Avenue in Brooklyn. The roaster is known for an exacting ultra-light approach to filter coffee and was an early American champion of Kenyan and Ethiopian micro-lots. Sey was named one of Sprudge's top roasters of the decade and has supplied beans for multiple US Brewers Cup finalists. The Scott Avenue space combines production roastery, café and cupping lab in a single airy room.
