This semi-washed coffee is both very clean and a little funky at the same time. Its elegant, floral fragrance is paired with lots of fruity notes, especially of berries and citrus fruit. After the ripe cherries are harvested, they first undergo a 24-hour oxidation process. Next, a two-stage fermentation begins with 24h in plastic bags, followed by pulping and another 32h of fermentation with yeast to increase microbial activity. A thermal shock process follows, which is said to increase sweetness in this case, and helps to remove the mucilage layder. Finally, the coffee beans are washed with spring water and taken to the dryer for up to eight days, depending on the weather. During this time, it is removed four times a day to ensure even and consistent drying.
