El Ocote is named for the magnificent conifer tree that towers over the farm of Yeltsin Sagastume, the middle of three brothers that run seven famsily farms and a wet milling operation in the northeastern foothills of the Santa Bárbara Mountain. Yeltsin is known for his experimental yet mindful approach to coffee production and processing. This year’s offering from El Ocote is a fully washed single varietal called Parainema, a disease resistant strain known for its unique cup quality. This lot showcases flavor notes of ripe stone fruit and an acidity profile that is both juicy and clear.
