Hummingbird Coffee was founded in Christchurch in 1997 and is one of the South Island's most established specialty roasters, with a strong Fair Trade and organic sourcing programme. They roast a rotating seasonal single-origin lineup (Ethiopian Yirgacheffe washed lots a recurring favourite) alongside long-running house blends, and supply cafés across both islands.
