The cherries are carefully selected, soaked, depulped, and dried slowly for 35 days with the mucilage kept on the bean, giving the coffee a rounded sweetness, gentle body, and a very expressive fruit character. For us, it is a beautiful Ethiopian honey coffee, soft, layered, sweet, and very easy to fall in love with.
