The air is thinner, the temperatures cooler, and everything moves a little slower. When we spent time there, we could feel how much patience this altitude demands. Their natural process is careful and intentional. Nothing rushed, nothing forced. The cherries dry slowly, building energy and clarity at the same time. In the cup, it feels alive orange, berries, bright citrus and tropical yellow fruit. Vibrant and expressive, but never chaotic. There is brightness, but also balance.
