Omar Rodriguez leads the family coffee business, and for two decades, he has chosen a highly evocative name for one of his most distinctive plots, located in Capucas, San Pedro Copán, Honduras. Alfolì, in fact, means "granary," and also evokes the place where the germ of life is preserved. This is particularly significant, considering that Omar is also an evangelical pastor, and that the plot is characterized by an incredible botanical variety of plants, almost a botanical garden of local biodiversity: various citrus trees, banana trees, plane trees, various flowering plants, palms, and shade trees whose aromatic notes are abundantly found in the coffee's flavour. Selective hand-picking, natural drying in greenhouses on "African beds".
