ONA was founded in Canberra in 2009 by Sasa Sestic, who went on to win the 2015 World Barista Championship. The Fyshwick roastery powers cafés across Canberra plus a Sydney outpost (Marrickville). ONA is the Australian name most synonymous with competition coffee and post-harvest processing innovation — Sasa's Project Origin trades carbonic-maceration and yeast-fermented lots into the global specialty market.
