It's an absolute delight to be offering a Colombian again at the Roastery; as every-time we get one, we are absolutely stunned and Penas Blancas is no exception. So much so, we've secured 140kg of this particular offering due to how good it was on the cupping table. Penas Blancas is the washing station used by two leading producers in Huila; Jhoan Vergara and Nestor Lasso, with their collective efforts as neighbours in Acevedo and Pitalito bringing together the very best of Huila in this shared community lot. Nestor and Jhoan have built an incredible network of honest, hard-working and well educated farmers, wherein families whom contribute to this project receive fair price for their parchment rather than a fixed low rate, bringing community together in a way not often seen throughout Colombia, through friendship, honesty and mutual respect. Each lot brought to the washing station undergoes floatation, carefully monitored fermentation, and technical washing, following a rigorous protocol designed to highlight clarity, sweetness, and balance. On the cupping table, we were blown away by the complexity of Penas Blancas, considering it's washed process, with incredible sweetness from notes of caramel and cinnamon, with. a subtle undertone of peach throughout. Our recommendation would be that Penas Blancas is suitable for filter brewing methods, most specifically through paper, such as an Aeropress or V60.
