We're diving in head first to our inaugural trip to India! Ratnagiri Estate are one of the pioneers of speciality coffee in India, specifically, speciality arabica, after many years of the country as a whole being well known for poor quality robusta, the Patre family at Ratnagiri have bucked the trend and are producing some truly excellent exports. The Ratnagiri Estate is often known as 'pearl mountain' due to the silver oak trees that shade the saplings when growing. Nowadays, specifically owner and lead producer Ashok Patre runs the show, converting the farm from a traditional commodity robusta farm in 1989, to a more speciality focused operation, practicing specifically washed coffee in the first place, and moving gradually in to more experimental process, such as Mossto and Fermentation methods as a whole. Ashok is very focused specifically on eco-friendly farming; using only natural fertilisers with no usage of herbicide or pesticide. In this case, we've gone for a mossto Washed lot, which, around the rest of the world, is usually known as anaerobic fermentation. The cherries undergo fermentation for 48 hours, followed by vacuum impregnation—applying vacuum pressure in the bioreactor to drive the microbe-enriched mossto into the seed—then depulped and fermented with the same mossto for 36 hours before washing and slow drying in a dark room for 14 days. Overall, the end product of this meticulous approach is a full-bodied, yet, sweet speciality coffee, with notes of clean dark chocolate, vanilla and brown sugar, we reckon that this lot would be most suitable for espresso and stove top, but is able to be used for all methods if preferential.
